Smoked Goose is a delicious alternative to Smoked Duck, it is less sweet and has a stronger flavour and texture. 
Serve thinly sliced with a berry sauce,(see recipes), or Red Pepper & Chilli Jelly as a rich, festive starter or a canape.

Our Smoked Whole Boned Quail are very lightly cured and oak-smoked to enhance their delicate game flavour.  Serve on a nest of dressed rocket leaves or lightly cooked baby leeks, with drizzle of melted Thai Jelly.

Our  famous Smoked Welsh Dragon Sausage "Pork," is a spicy pork, leek and chilli sausage made by our local butchers.  Hot-smoked by us for even more flavour!  Watch the bite! 
Delicious as a ready to eat nibble or sliced, re-heated to sizzling and tossed into salad, pasta, soup or stews!
